A few years back I visited a King’s Supermarket in New Jersey and bought some of their quinoa, spinach and feta salad. I thought it was really delicious but I don’t live near a King’s and when I did make my way there, they didn’t always have it on hand. I also wasn’t a big fan of the price. I believe it was $9.99 a pound. I needed a cheaper alternative. I looked for a copycat recipe online, but I couldn’t find one. I was confident I could recreate the recipe myself and I did! My version of it at least. Mine is very simple but still delicious.

I’ve omitted the feta because I really don’t like feta. Not only is this salad really tasty, but it is nutrient dense and low in calories. Quinoa is high in protein, making it an excellent meat replacement. It’s also high in vitamins and minerals like manganese, iron, magnesium, folate and vitamin E. The oil adds a healthy fat, which we need in moderation. Eating well will help slow down the aging process and keep us looking and feeling young! Not to mention ward off diabetes and high cholesterol which will add years to your life. This salad will do just that!

I usually just measure with my heart, but I’ve added measurements to make it easy. Jazz it up until it makes your taste buds dance! Feel free to add your own favorites like olives, diced tomatoes and feta.

What you’ll need:

  • 1 cup of cooked and cooled quinoa.
  • 3 cups of baby spinach.
  • 1/2 cup of diced red pepper.
  • 1/2 cup of diced red onions.
  • 1 lemon or 1/4 cup lemon juice.
  • 1/4 cup of avocado oil or olive oil. salt and pepper to taste.
  • In a bowl, add quinoa, oil and lemon juice. Followed by the spinach, red pepper and onions. Mix it up until everything is evenly coated. You always can add more lemon juice or oil if need be. Like I said, measure with your heart. Enjoy!
